STUFFED ZUCCHINI BOATS

Ingredients:
4 medium zucchini
1-cup chopped tomatoes
1/2 tablespoon Italian seasonings
¼ cup chopped onion
½ teaspoon fresh chopped basil
½ teaspoon fresh chopped oregano
1- 16oz can red kidney beans drained (reserve 1/2 cup) and rinsed
½ cup seasoned breadcrumbs
½ cup grated Parmesan cheese
Directions:
- Cut zucchini in half length wise and scoop out pulp, leaving ¼ inch thick shells.
- Mash kidney beans with 1/2 cup reserved liquid and mix with pulp. Add chopped tomatoes Italian seasoning.
- Add remainder of ingredients and mix well.
- Place zucchini halves in 13x9x2 baking dish sprayed with oil.
- Spoon stuffing mixture into zucchini shells.
- Bake at 350 degree for 30 minutes or until zucchini is tender.
Serve with green salad.
